Do you know that eating foods in season makes you healthier? It is because foods during their peak season taste better, making them more appealing to your taste buds and they nourish your body more. During spring season come also my spring cooking habits that really make me busier in the kitchen.

There is a wide array of fresh and healthy foods during spring season. From vegetables to fruits, there are many recipes I could make as part of my spring cooking habits. I love preparing and eating them together with my family and of course sharing it to my avid readers.

One of my spring cooking habits is preparing Pesto Chicken Pasta Salad, a quick and easy recipe that combines curly pasta, tender chicken and fresh, crisp vegetables. To prepare, simply bring a large pot of water to a boil. Meanwhile, combine and mixed well the mayonnaise, yogurt, pesto, and milk in a large bowl. Add tomatoes, bell peppers, chicken and cheese and mix well again. Then, set aside. Cook pasta in boiling water until al dente. When the pasta is done, drain over peas in strainer; shake off excess water and stir into bowl with all remaining ingredients then cover. Just chill it for 4 to 5 hours before serving.

Vegetables such as apricots, artichokes, asparagus and carrots are also plenty during spring. Since roasting is an excellent way to prepare asparagus, it becomes one of my spring cooking habits to make Asparagi alla Parmigiana, an Italian recipe. It is so easy to prepare. Simply preheat oven to 450degrees F. Put butter in a shallow gratin that is large enough to hold asparagus. Layer the asparagus in the dish with all tips facing in one direction. Sprinkle with small amount of salt and pepper and some cheese. Then, bake for 15-20minutes or until asparagus are cooked and cheese are melted.

Spring fruits are also abundant during this season. Strawberries, melons and rhubarb along with peaches, grapes, citrus fruits and raspberries are very common in the market. As part of my spring cooking habits, I used to prepare various recipes from these natural ingredients for me to celebrate and enjoy spring in a delicious way.
