We are all living in a very advanced and fast-paced world full of stress, takeaway food, coffee, and more stress. With that, it can be very difficult to keep yourself healthy and find time to exercise, especially if you have the same time schedule as me. I work throughout the day, thus I do not have any spare time to exercise. I cannot go on a diet either. Apart from I cannot find the best diet plan for myself, I feel that eating healthy foods is enough to keep myself trim and fit.

For my April recipes I wanted a light starter and a light filling main course. The melon starter is easy to do and the kids will love to help you make the boats. But they will probably eat as they make the boats.
So the boats may come out more as rafts! For the main course I have gone for Cashew Chicken which is an oriental dish. It is light on the belly but filling and easy to make. I can get Chicken in Portugal for about 4 euros for 3 breasts.

I always make a great effort with my Saturday night meals, in fact weekend meals in general are pretty special. During the week we are all busy doing our own thing and will eat our main meal at lunch time. Though at a weekend we will cook dinner together and then spend a couple of hours sat down at the table enjoying ourselves as we enjoy our food and drink.
