<p style="text-align: justify;">Here are my top 10 food downgrade solutions for improving your diet.</p>
<p style="text-align: justify;">1/ When ordering a Chinese takeaway meal it can make a huge difference if you order boiled rice rather than egg fried rice. A portion of boiled rice contains around 370 calories where as a portion of egg fried rice is more than double this amount. When you realise this fact and take it into account it makes the choice of boiled rice a little easier to make.</p>
<p style="text-align: justify;">2/ Wholemeal bread is a wiser choice than white bread. A good quality wholemeal bread is full of goodness compared to the white alternative which contains all sorts of chemicals and surprisingly sugar which makes a slice of white toast not such an attractive option.</p>
<p style="text-align: justify;">3/ The same thing goes for brown rice over white rice. Brown rice is in fact one of the most healthy foods your could choose and should always be used instead of white rice wherever possible.</p>
<p style="text-align: justify;">4/ If you drink full fat milk it is well worth opting for the semi skimmed variety, even if it is only for a few times a week. Full fat milk as the name suggests, is very fattening and if you are drinking a lot of it you will find that you are not doing any favours to your arteries.</p>
<p style="text-align: justify;">5/ If you are preparing a lovely roast chicken it will not make much difference to the taste if you remove the skin but it will make all of the difference to your waistline because the skin on a chicken is extremely fattening, and takes away the benefits of eating white meat if you leave the skin on when the chicken is being served.</p>
<p style="text-align: justify;">6/ A great food downgrade solution that many people don&#8217;t really think about is by using crème freche instead of cream in your cooking or when serving a desert. Please believe me when I say that the taste is absolutely gorgeous and it is far less fattening compared to the more traditional cream.</p>
<p style="text-align: justify;">7/ Instead of ordering a Chinese or Indian takeaway have a go at cooking your own. It is great fun and you will find that compared to the usual takeaways, yours will have far less calories if that is your aim. Many Indian meals for example contain food that is deep fried as well as many dishes that are cooked with cream. It is true that they are lovely, but by cooking you own you will find that the quality will surprise you and they will contain far less calories.</p>
<p style="text-align: justify;">8/ When you are going about your weekly shopping try and go for the low fat varieties of many of your usual day to day food. Examples are low fat margarine, yoghurt&#8217;s, sauces etc.</p>
<p style="text-align: justify;">9/ Cheese is always a favourite for so many people but the full fat versions are bad for your heart if you over indulge. Choose a cheese that is lower in fat such as cottage cheese and hard cheeses.</p>
<p style="text-align: justify;">10/ Finally, think about how you cook your food. If you fry your food use a good quality oil such as olive oil instead of lard or a cheap cooking oil. If the food you are cooking can be poached or oven baked then choose that option instead, it really will make all of the difference.</p>

<p style="text-align: justify;">Here&#8217;s some sweet news: people all over the country can still enjoy that crown jewel of New Orleans, the King Cake, this Mardi Gras season.</p>
<p>For those who don&#8217;t know, a King Cake is an oval-shaped bakery delicacy-a cross between a coffee cake and a French pastry that is as rich in history as it is in flavor. It&#8217;s decorated in royal colors or Purple for Justice, Green for Faith and Gold for Power: These colors were chosen to represent a jeweled crown honoring the wise men who brought gifts to the Christ Child on the Epiphany. A tiny plastic baby is hidden inside. Whoever gets the piece with the prize is named &#8220;King for a day.&#8221;</p>
<p>Some of the most popular King cakes are those created in New Orleans at the famous Randazzo&#8217;s Camellia City Bakery. Despite the devastation of Hurricane Katrina, the store recently reopened its doors and took part in a special program with DHL to bring a taste of home to displaced New Orleanians, residents and others for Mardi Gras.</p>
<p>Explained Tricia Zornes, owner of Randazzo&#8217;s, &#8220;Continuing local traditions like Mardi Gras helps revitalize the New Orleans economy, improves morale and shows the world that we can rebuild and re-establish the culture that has made New Orleans special.&#8221;</p>
<p>To help the rebuilding and celebrate the reopening, shipping company DHL developed a festive, co-branded shipping box, specially designed to open from the top to protect the rich icing and traditional shape. In addition, according to Zornes, the shipper&#8217;s sales representative offered his own time and effort to rebuilding the bakery after nearly everything was lost, from the valuable baking equipment to the building itself. &#8220;In addition to helping us create a new distribution process, he went beyond the call of duty in offering to help paint, or do any odd jobs that would help us get up and running quickly,&#8221; said Zornes.</p>
<p>&#8220;DHL has been committed to leveraging its resources to support disaster relief and long-term reconstruction along the Gulf Coast, and is now pleased to be able to support the private sector in rebuilding their businesses and their livelihoods,&#8221; said Kay Hart, Senior Vice President, Corporate Communications, DHL Americas.</p>

<p>Today, we look for versatility, variety and convenience in the foods we eat. Tomatoes top the list of versatile foods because they are not only good for you, they complement almost any meal or occasion.</p>
<p>There are more than a dozen varieties of tomatoes. Slices of large, round tomatoes are great on the grill; Roma or plum tomatoes make delicious sauces; and cherry or grape tomatoes make a convenient snack.</p>
<p>Tomatoes&#8217; versatility makes them ideal for all eating and entertaining occasions, whether used as an ingredient, an accompaniment or as a stand-alone.</p>
<p>To ensure the best flavor, never refrigerate. The tomato makes an enzyme that produces flavor as it ripens. Once the temperature falls below 55 degrees, it permanently stops producing that enzyme.</p>
<p>Tomatoes are an important dietary source of lycopene, an antioxidant being studied for its ability to keep tissues healthy. Tomatoes also are high in vitamins and fiber &#8211; one medium red tomato has 20 percent of the daily requirements of vitamin A, 40 percent of the daily requirements of vitamin C and as much fiber as a slice of whole wheat bread.</p>
<p>This tomato recipe, developed by SunRipe Produce, meets nutritional standards set by Produce for Better Health Foundation.</p>
<p>SUNRIPE BELLA ROMA DI POMODORO</p>
<p>(Makes 6 servings)</p>
<p>3 tablespoons extra virgin olive oil</p>
<p>3 medium garlic cloves, peeled and thinly sliced</p>
<p>12 Bella Roma Italian-style tomatoes (plum tomatoes), cut into chunks</p>
<p>1/8 teaspoon salt</p>
<p>1/8 teaspoon pepper</p>
<p>1 pound penne pasta</p>
<p>10 basil leaves, torn by hand into small pieces</p>
<p>1/4 cup chopped fresh parsley</p>
<p>In a large skillet, heat olive oil and saute garlic. Add Bella Roma (plum) tomatoes, salt and pepper. Simmer sauce for 10 to 15 minutes; do not overcook the tomatoes. Meanwhile, cook pasta according to package directions. Spoon sauce over pasta and sprinkle with parsley and basil.</p>

<p style="text-align: justify;">If you are just starting to cook, or are moving in on your own, chances are, you don&#8217;t have much in terms of cooking equipment. Here is what we recommend for you to get, as you are starting out. As times goes by, you will, of course, get more kitchen gadgets. But here are five that we recommend starting out with:</p>
<p>- Chopping board. This is something very basic, as you can&#8217;t chop anything without having a chopping board. It is very versatile, as you can chop pretty much anything on it &#8211; onions, potatoes, tomatoes, meat, herbs, etc.</p>
<p>Some people prefer to get separate chopping boards to meat, dairy items, vegetables, etc. Others get differently sized chopping boards, and use them depending on the volume of things they need to chop. Start out with one, and see what else you need.</p>
<p>- A knife. Again, this is very basic, but you will not be able to chop or cook anything without a knife. A good, sharp knife goes a long way to help you prepare food. You can go to some stores, and hold the knives in your hand, so that you know which one you are comfortable with.</p>
<p>- A big pot. You need a pot for pretty much anything &#8211; from boiling pastas to making soups to stewing to pretty much anything else. Some pots come with colander inserts, which makes it easier to cook pasta. Or, you may get a colander separately, and use that.</p>
<p>- A saute pan. We love saute pans, and use them all the time. Again, they are very versatile, and we recommend getting ones without wooden handles, so that you can put the saute in the oven as well.</p>
<p>Use the saute pan for preparing stir fries, sauteing meat and fish, cooking vegetables and much, much more.</p>
<p>- Roasting Pan. These are perfect for preparing things in the oven. From roast to roasted chicken to roasted vegetables, a roasted pan can help you cook your favorite dishes in the oven.</p>
<p>Don&#8217;t be scared &#8211; cooking is fun. Start getting a few things that we recommended, and add to your collection of kitchen equipment as time goes.</p>

<p>Chinese Recipe of Beef Fried Rice Recipe</p>
<p>Ingredients:</p>
<p>2 Tbs. soy sauce<br />
1/2 tsp. sugar<br />
1 Tbs. vegetable oil<br />
2 eggs, well beaten<br />
1/2 lb. ground beef<br />
1 medium carrot, finely chopped<br />
1 celery rib, finely chopped<br />
1 scallion, chopped<br />
1 tsp. fresh ginger, minced<br />
1 clove garlic, minced<br />
2 cups cooked rice, cold</p>
<p>Directions:</p>
<p>Combine soy sauce, sugar and salt and pepper to taste in a small bowl and set aside. Heat oil in a heavy nonstick skillet over medium high heat. Cook eggs about 45 seconds, stirring constantly, until eggs are just set. Transfer eggs to a bowl and set aside. Add ground beef and next 3 ingredients to same pan over medium heat. Sauté about 3 minutes, stirring often to break up meat, until browned. Stir in ginger and garlic and cook 1 minute. Discard excess fat. Increase heat to high and add rice. Stir-fry about 1 minute, until heated through. Stir in soy sauce mixture and eggs and stir-fry 30 seconds longer.</p>
<p>Per serving:<br />
calories 338, fat 15.7g, 43% calories from fat, cholesterol 133mg, protein 16.8g, carbohydrates 31.0g, fiber 1.6g, sugar 2.5g, sodium 547mg, diet points 8.3.</p>
<p>Classic Chinese Chicken Teriyaki</p>
<p>1/4 cup lite soy sauce<br />
3 tbsp prepared spicy brown mustard<br />
1 tbsp firmly packed brown sugar<br />
1/2 tsp ground ginger<br />
1 tbsp sesame seeds<br />
1 sliced thin medium onion<br />
1 cut in half garlic clove<br />
2 tbsp vegetable oil<br />
4 skinned boned chicken breast halves, each about 4 oz<br />
1 spinach and pepper saute (see recip, e for this)</p>
<p>Directions:</p>
<p>In medium bowl, whisk together soy sauce, mustard, sugar and ginger;<br />
set aside.</p>
<p>In large, nonstick skillet, over high heat, toast sesame seeds until golden brown, about 4 minutes; remove from pan and set aside.</p>
<p>In same skillet, saute onion and garlic in oil until soft, about 5 minutes, if desired, discard garlic clove halves. Add chicken and soy sauce mixture to skillet. Cover and simmer, turning chicken over once, until chicken is cooked through.</p>
<p>Meanwhile, prepare spinach and pepper saute. To serve, place chicken on platter, pour sauce and vegetables over chicken and sprinkle with sesame seeds. Place sauteed mixture on platter. Garnish with scallion fan.</p>

<p style="text-align: justify;">Are you tired of your regular Joe life and your regular Joe cup of coffee that you start your day with? Then it’s time to reward yourself with something different. Why not jazz up your morning ritual with cup of rich gourmet coffee.</p>
<p>The dictionary defines gourmet food like this, “Gourmet food is that which is of the highest quality, perfectly prepared and artfully presented.” If you want the highest quality food you go to a top notch restaurant but if you want the highest quality coffee, you can do that at home yourself. That gourmet meal is probably going to stay at the restaurant unless you invite a chef over but gourmet coffee can be made in the comfort of your own home with just a little practice.</p>
<p>Gourmet coffee is more expensive than say, supermarket brands but the taste is also much richer. Unless money is no object, why not save the gourmet cup of coffee for the weekends. Make it an end of the week tradition. Stick with the supermarket coffee for when you’re rushing off to work.</p>
<p>To make your own gourmet coffee start with the beans. Gourmet Coffee beans can be bought by the pound and there are many varieties to choose from. Some of the most popular gourmet beans include Kona, Jamaican Blue Mountain, and Sumatra types.</p>
<p>Coffee beans are similar to wine in that they name the beans after the region. In the world of wine you have the popular Sonoma wines which come from Sonoma Valley in California. In the world of coffee the equivalent would be Kona beans which come from Kona, Hawaii.</p>
<p>Kona coffee beans are grown in rich volcanic soil and the mild tropical climate of the Kona coffee belt on the western side of the Big Island of Hawaii. It has a wonderfully full, rich and smooth flavor with little or no bitter after taste. Be sure that you buy Kona beans and not a Kona blend. A Kona blend can legally be labeled as Kona with as little as 10% of actual Kona beans in it.</p>
<p>Next you’ll need to grind your beans. Ground coffee begins losing it’s flavor once it’s exposed to air. So you’ll want to grind just enough to make your desired amount. Store any leftover grinds in an air tight container. You’ll want to grind you coffee beans very fine but don’t pulverize them into dust. If you over grind them the heat and friction will vaporize the oils that give the coffee it’s distinct flavor.</p>
<p>When was the last time you cleaned your coffee maker? A clean coffee maker makes a significant difference in how your coffee tastes. At least once a month pour a mixture of half vinegar and half water into your coffee maker. Let the mix run through the full brew process. Repeat the process again using only water this time to rinse it out. Do this one more time if a vinegar smell is still present.</p>
<p>Now you’re work is done and it’s time for the coffee maker to pulls it’s weight. Use clean filtered water and fill the coffee maker to the desired level. Use about 6 ounces of water for every 2 heaping tablespoons of coffee. Turn it on and hang around while it brews. You’ll want to be there to enjoy the delightful aroma.</p>
<p>Everyday coffee is perfect for everyday life. But every once in a while you should treat yourself to something special. And what better way to start a special than that with a special cup of coffee. Gourmet coffees can really jazz up your day.</p>

<p>We have hear a ton of time that the secreat for a great barbecue is in the sauce.  Well, it migth be!  What is a barbecue chicken, a rack of barbecue ribs or a t-bone steak without a accompaining sauce? Well I am sure this can spark a debate among different school of though ( or I should say barbecuing?&#8230;)  about the need of sauce, but my own personal experience has lead me to believe that the secret is in the sauce.</p>
<p>Let me share with you four barbecue sauce recipes and you will be the judge!</p>
<p><span style="text-decoration: underline;">Simple Pork Barbeque Sauce </span><br />
2/3 c. catsup<br />
1/3 c. brown sugar<br />
1 tbsp. Worcestershire<br />
Hot sauce to taste<br />
Rosemary (crumbled) to taste</p>
<p>Mix all ingredients together. A good brand of hot sauce for flavor is Louisiana hot sauce. Brush on pork spare ribs, steaks, or chops while barbequeing or baking.</p>
<p><span style="text-decoration: underline;">Honey Tomato Barbeque Sauce </span><br />
1 pkg. taco seasoning<br />
1/2 c. tomato sauce<br />
2 tbsp. butter<br />
1/2 tsp. salt<br />
1-2 tbsp. soy sauce<br />
1/8 tsp. oregano<br />
1/4 tsp. pepper<br />
1 sm. onion, diced</p>
<p>Saute onions in butter until soft, about 5 minutes. Add all other ingredients and simmer another 5 minutes. Adds a little &#8220;zing&#8221; to your chicken or meat on the grill.</p>
<p><span style="text-decoration: underline;">Easy Barbeque Sauce </span><br />
1 tsp. Worcestershire sauce<br />
3 tbsp. vinegar<br />
1/4 c. catsup<br />
1/8 tsp. pepper<br />
4 tbsp. sugar<br />
1/4 c. chopped onion</p>
<p>Mix together and cook over low heat 5 minutes. Easily doubled.</p>
<p><span style="text-decoration: underline;">Barbeque Sauce with a Spicy Kick</span><br />
1/2 tsp. garlic powder<br />
1/2 tsp. pepper<br />
Dash of cayenne<br />
1 tbsp. Worcestershire sauce<br />
1 tsp. onion salt<br />
2 tbsp. vinegar<br />
1 tsp. sugar<br />
2 tbsp. water<br />
Red pepper<br />
1/3 c. butter</p>
<p>Heat all ingredients, stirring frequently until butter is melted.</p>
<p>As I said before, you&#8217;ll be the judge.  Pick the one that best suits your barbecue venture and enjoy!</p>

<p style="text-align: justify;">The Szechuan style of cuisine arose from a culturally distinct area in the central western of part of China, a province known as Sichuan. This area of China came into its own culturally towards the end of the Shang Dynasty, during the 15th century. However, it was also the climate of the area that helped to shape the culinary traditions that were to arise from Sichuan province and make their way into the realm of international cuisine.</p>
<p style="text-align: justify;">The province from which the cuisine that the world knows as Szechuan evolved is often hot and humid, and this contributed to this necessity of preparing foods in ways that differ significantly from other regions of China. Szechuan cuisine is primarily known for its hot and spicy dishes, though naturally there is more to Szechuan food than spice and sauces rich and strong in flavor.</p>
<p style="text-align: justify;">A general overview of culinary history and trends reveals that, for the most part, areas that tended to spice heavily were areas in which the fresh food supply was not as reliable as in places that traditionally used a lighter hand in their use of spices. The climate of Sichuan is conducive to faster food spoilage. This, particularly in the past, made necessary food preservation techniques that themselves left behind a strong flavor, such as salting, pickling, drying, and smoking. Thus, spices served to mask the flavors of less than fresh foods and those that have been preserved by methods that affect their natural flavors. In addition to masking certain flavors, the use of hot spices, such as chili peppers, tends to be more common to hot climates, as the sweat that they can produce is thought to cool the body.</p>
<p style="text-align: justify;">Much of the spicing of regional Chinese cooking is based upon bringing together five fundamental taste sensations – sweet, sour, pungent, salty and bitter. The balance of these particular elements in any one dish or regional cuisine can vary, according to need and desire, especially as influenced by climate, culture and food availability.</p>
<p style="text-align: justify;">In Szechuan cuisine, there are a variety of ingredients and spices used to create these basic taste sensations. These include a variety of chili peppers, peppercorns over various types, Sichuan peppers, which are in reality a type of fruit, not pepper, and produce a numbing effect in addition to their warm flavor. Sichuan peppers, also called flower pepper and mountain pepper, are a traditional part of the Chinese five spice powder, or at least of those that are modeled upon the most authentic versions of the spice combinations common to regional Chinese cooking.</p>
<p style="text-align: justify;">Other ingredients used commonly in Szechuan cuisine to create the five fundamental taste sensations include different types of sugars, such as beet root sugar and cane sugar, as well as local fruits for sweetness. The sour comes from pickled vegetables and different varieties of vinegar. A special bitter melon is added to many dishes to offer the touch of bitterness that complements other flavors. Other spices and flavors include dried orange peel, garlic, ginger, sesame oil and bean paste. Salt is important to Szechuan cuisine, and the area produces uniquely flavored salts that help to distinguish authentic Szechuan cuisine from the other regional cuisines from China.</p>
<p style="text-align: justify;">Szechuan cuisine is marked by its rich traditional flavors, which stem from a culture of hundreds of years and are in part shaped by the natural forces of climate. Authentic Szechuan cuisine offers a unique dining experience made up of adventurous and creative taste sensations.</p>

Roast chicken is not stuffed inside. The secret is to baste the poultry several times during roasting with butter and cooking oil and to add an onion in the roasting pan. Roast chicken is traditionally served with potatoes and green beans.</p>

The most famous beef stew in France. Boeuf bourguignon is a traditional recipe from Burgundy. A recipe that french people use to cook at least once every winter. The beef meat is cooked in a red wine sauce, obviously a red wine from Burgundy. Bacon, onions, mushrooms and carrots add flavor to the recipe. But thyme, garlic and beef stock are essential to cook a good boeuf bourguignon.</p>
<p><span style="text-decoration: underline;">Mussels mariniere</span><br />
A typical summer recipe very popular along the Atlantic and Mediterranean coast. Mussels are fresh and cooked in a white wine sauce with parsley, thyme, bay leaf and onion. It takes only 5 minutes to cook a tasteful mussels mariniere. The secret is to season carefully the meal and to discard any mussels that don&#8217;t look good enough.</p>
<p><span style="text-decoration: underline;">Sole meuniere</span><br />
Although sole is an expensive fish, the taste is so elegant that it is considered as the noblest fish. Sole meuniere is a recipe from Normandy. The fish is cooked in a butter sauce with a little bit of flour and lemon juice. Sole is traditionally served with rice or green vegetables.</p>
<p><span style="text-decoration: underline;">Pot au feu</span><br />
A typical family meal coming once again from Normandy. Pot au feu is a boiled beef with pork, chicken and vegetables. It takes about 4 hours an a half to cook as the beef has to simmer slowly to extract all its flavor. Pot au feu is also called Potee Normande in France.</p>
<p><span style="text-decoration: underline;">Sauerkraut</span><br />
Quite similar to the german sauerkraut, the french sauerkraut called choucroute comes from Alsace. However the french recipe can be traced back to 6 centuries ago ! Sauerkraut is a fermented cabbage. Commonly sauerkraut includes sausages, pork knuckle and bacon. Two essential ingredients are alsatian white wine and juniper berries.</p>
<p><span style="text-decoration: underline;">Veal stew</span><br />
Called blanquette de veau in France, this is another stew recipe from Normandy. The veal meat simmers in white sauce – as blanquette from blanc stands for white in french &#8211; with mushrooms and onions. The white sauce is made of egg yolks, whipping cream and lemon juice. Veal stew is usually served with rice.</p>
<p><span style="text-decoration: underline;">Lamb navarin</span><br />
Another stew but this one is made of lamb meat. It is also called spring lamb as it comes with green vegetables available in spring. Navarin comes from navet which stands for turnips in french. Other ingredients are tomatoes, lamb stock and carrots. This stew takes less time to simmer than any other.</p>
<p><span style="text-decoration: underline;">Cassoulet</span><br />
A strange recipe that english people often confuse with their traditional breakfast! A traditional meal from south west of France. Each village has its own recipe but it always includes beans and meats. Cassoulet is a rich combination of white beans and depending on the village lamb, pork, mutton or sausage meat. Cassoulet is the cornerstone of the french paradox study describing why people from south west of France suffer less than others from infarcts.</p>
<p><span style="text-decoration: underline;">Bouillabaisse</span><br />
Bouillabaisse is closely linked with the city of Marseille on the Mediterranean coast. The recipe is a fish soup from local fish and seafood products including crabs, scorpion fish, monk fish and others. Provencal herbs and olive oil are essential. For a long time, the recipe was a secret jealously kept by the people from Marseille.</p>

<p style="text-align: justify;">The first documented cheesecake was at an Olympic game in the seventh century in Greece. It then spread to other European countries and eventually made its way to North America when immigrants crossed the ocean to seek their fame and fortune. Little did they know that the recipe they brought with them would eventually launch a huge following of people who love cheesecake and would balloon into a multimillion-dollar industry across the world.</p>
<p style="text-align: justify;">The decadent taste and texture of cheesecake belies the fact that it is fairly simple to make. Cheesecake lovers know that they can have this delightful delicacy anytime they want by stirring up a few basic ingredients including cream cheese, sugar and eggs, and then pouring it into a pie shell which can be made of graham cracker crumbs or other conventional pie crusts and baked.</p>
<p style="text-align: justify;">So what&#8217;s not to love about cheesecake? It can be eaten anytime of the day or night, it&#8217;s easy to make and even easier to buy, it tastes divine, and on top of all this, it creates a feeling of well being that only comes from being good to yourself.</p>
<p style="text-align: justify;">So go ahead, eat and be jolly!</p>
