Baking with the kids: Christmas Surprise Cookies

Here is a great recipe for baking with the kids over Christmas time. It is my Christmas surprise cookies that the children will love making with you.

Ingredients:

3/4 cup of shortening

3/4 cup of light brown sugar

1 egg

1 3/4 cups of flour

1 teaspoons of baking soda

1/2 teaspoon of salt

1/2 teaspoon of vanilla extract

3/4 cup of shredded coconut

2 teaspoons of cream of tartar

Any flavour jam or jelly

Method:

Cream the shortening and sugar together. Add the egg and mix well. Sift dry ingredients together and add the sugar and shortening. Add the vanilla mix well and then drop by teaspoons-full onto un-greased cookie sheet. With your finger or a spoon, make an indentation in the centre of the cookie ball and fill with jam or jelly. Sprinkle coconut over all and bake at 375F for 10-12 min.

This is just so simple but so lovely as something to do for half an hour with your children to indulge in the Christmas spirit.
