Blueberry Pecan Dark Chocolate Soy Pudding Crunch

The Majority of us love blueberries and I am not alone with this love for them. Especially when dark chocolate is included too. My personal opinion is that not enough of us enjoy regular dark chocolate which is so much better for us than the usual milk.

I have therefore got a recipe for you today of blueberry pecan dark chocolate soy pudding crunch.

Ingredients:

1 1/2 Cups Soy Milk

4 oz Dark/Bitter Sweet Chocolate, Chopped

1/4 Cup Sugar

3/4 Cup Egg Substitute

1 Cup Fresh/Frozen Blueberries

I’m sure you must all be as fed up as I am of buying a drink that claims to be juice and on opening it, find out that its some strange colored imposter.

seems to have many different meanings. To me, fruit juice is extracted from real fruit and is both tasty and full of nutrients. To some drinks manufacturers, it seems to mean that a bland tasting liquid can be passed of as juice if its color co-ordinates with its name! Yet still we buy them, under the assumption that as they have some fruit in them they must be healthy.


Silky Cranberry Cherry Freeze Pops

If you are ever fancying a naughty treat that is all dairy free you will love these cranberry cherry freeze pops. They are very easy to make yet good for you at the same time.

Ingredients:

3 oz Soft Tofu

3 oz Soy Cream Cheese

1/3 Cup Light Corn Syrup

1 Can (16oz) Whole Berry Cranberry Sauce

1 Jar (10oz) Maraschino Cherries, Drained, Cut In Half

1 Can (8oz) Crushed Pineapple, Well Drained

Zest Of One Orange

Juice Of ½ Fresh Orange

8 oz Non-Dairy Whipped Topping


Keeping warm with a wonderful menu this month

Even though I live in the sunny skies of Portugal we still have really cold winters just like most of the world. It gets warm from around March so we are now at that point when we are sick to death of the cold weather and all we want to do is have a walk by the beach.

However I should be grateful when I look at how bad the weather is in England.

With cold weather though comes a winter menu and I love cooking hot winter food that you can enjoy for hours with your family.


Crusty Citrus Pork Chops with Edamame Walnut Salad

Here is a fantastic recipe for you of crusty citrus pork chops with edamame walnut salad. This meal can be enjoyed at any time of the year and is also great for if you are trying to stay trim.

Pork Chop

Ingredients:

½ Cup Dark Brown Sugar

½ tbsp Coarse Ground Pepper

1 tbsp Kosher Salt

1 tbsp Sugar

½ tbsp Smoked Paprika

4 2inch Thick Pork Chops

Olive Oil

2 Oranges, Cut In Half

Method:

1. Preheat grill.

Taco Burgers Recipe

We all love burgers and making a nice taco burger should be top of your cookery plans. I am often making burgers with my eight year old son so I thought I would share this recipe for you so that can do the same.

You can make family-pleasing burgers with TVP following this simple recipe. Or you can use the TVP mixture as you would a ground beef mixture inside tacos. The choice is yours.

Ingredients:

3/4 Cup Beef Broth/ 3/4 Cup Water Plus 1 Beef Bouillon cube, Crushed

1 Cup TVP
