Coconut Meringue Cookies

We all love a quality cookies recipe and if you have had your fill of the famous chocolate cookies I have a fantastic alternative for you with my Coconut Meringue Cookies. These really will put a lovely smile on your face and the kids will just love them. Not to mention the big kid inside all of us!

This is a quick recipe that will be wonderful if you have a spare half an hour.

Ingredients:

4 Medium Egg Whites

1.25 Cups of Sugar

0.25 Teaspoon of Salt

0.5 Teaspoon of Vanilla


How many McDonalds is acceptable to eat in your diet

I love a McDonalds for a quick fix but how many McDonalds is acceptable to eat in your diet? There has been a lot of bad press recently especially in Europe for families eating way too many McDonalds and it effecting their children’s health. For me though the idea of fast food is for special occasions and should never be taken to these levels.

I love all kinds of fast food outlets but my favourites are McDonalds, KFC and Pizza hut. I am not much a fan of Burger King as I don’t find their food that nice.


Enjoying the leftovers: Finally save money on your family budget

In this day and age it is such ashame if you waste food whether you are on a budget or not. The sight of rotting food in the back of the fridge is the last thing you want to see but how can you stop it?

Even if you write an amazing shopping list and don’t overspend things come up and a certain planned meal can soon be forgotten about. Remember all those times you have gone into the freezer and discovered that the meat you had planned to eat sometime this week is past its due by date. You start getting cross with yourself that you wasted money on a nice piece of food only to have to throw it in the bin.


4 Fantastic Healthy Lunches

We all enjoy our lunch but the majority of us end up in a slump eating the same old boring sandwiches day after day. This is why i have created for you 4 fantastic healthy lunches so that you can look forward to lunch time again.

1. Beans on toast with a twist – Add a spoonful of curry paste to a can of baked beans and heat it through. Pile it onto a couple of slices of fresh brown bread and place on a grill tray. Sprinkle a couple of handfuls of sliced onions that have been pre-boiled and a two pinches of parsley. Then grill for three minutes and serve immediately.


Baked Jam Roly Poly

If you are anything like me you will love something sweet to eat during the hot summer months. Whether it is something warm or cold we have to have our treats especially when it involves making them with our kids. Think of all the times when you were little and you did the baking with your mum or grandma it is such a lovely memory isn’t it?

So carrying on with my summer baking theme here is a lovely recipe for baked jam roly poly.

Ingredients:

8 oz self raising flour
4 oz shredded suet
1 tsp salt
Water
Jam


Easy chocolate chip cookies

We all love chocolate chip cookies and I must admit I am no different. Whether it was the easy chocolate chip cookies that I ate as a child or the ones I have enjoyed making with my son they are incredibly naughty but extremely nice.

Here is my recipe for easy chocolate chip cookies that I hope you will love as much as I do:

Ingredients:

125g Butter
1/2 Cup Sugar
1/2 Cup Brown Sugar
1/4 Teaspoon Vanilla Essence
125g Chocolate Chips
1 Medium Egg
1 3/4 Cups Self Raising Flour
1/2 Teaspoon Salt

Five Minute Chocolate Mug Cake

This is a lovely quick pudding that takes less than five minutes to make and is perfect for eating after a family meal. Both kids and adults will love my five minute chocolate mug cake.

Ingredients:
1 coffee mug
4 tablespoons of plain flour
4 tablespoons of sugar
4 tablespoons of baking cocoa
1 medium egg
1 tablespoon of milk
3 tablespoons of oil
3 tablespoons of chocolate chips

Method:
Add the dry ingredients into the mug and mix them together well. Add the egg and mix it in thoroughly then pour in the milk and oil making sure that you continue to mix it well.
