The perfect Pizza Dough

When I look back at my childhood the one bit of baking that I enjoyed doing the most was making pizza’s when my school friends came round for tea after school. It was wonderful making them from scratch and rolling out the dough before deciding what to put on top of them. There would be three or four of us yet each one of us would have a pizza that would look unique to us.

I have recently managed to get my hands on my mums pizza dough recipe and make a few adjustments whilst making a couple of pizzas with my son and here is the recipe just for my blog readers……


Home Baking with the kids – a budget winner

At the moment many of us are lacking money through the current credit crunch and at the best of times doing things with the kids can be rather expensive. As a parent myself I too understand the costs and the fact that children get bored so quickly. You then find that they spend most of their day in front of the telly or playing alone with their toys.

But apart from arts and crafts children also adore baking especially licking the bowl out when you have finished making something with them. Us parents also love baking except for all the mess it makes but as long as you have a dustpan and brush to hand it is not as bad as you think.


Home Cooking Vs Takeaways

Yes we all love a good takeaway but given the choice would you rather have a takeaway or enjoy a tasty home cooked meal just like our mums used to make us in the good old days. I remember the gorgeous sunday roasts and the homemade lasagne that came with a lovely helping of salad.

How could you resist it?

With having a child you have to embrace the fast food culture but if I was childless I would probably go two years without any fastfood and I wouldn’t miss it at all.


Traditional Tomato Soup

We all love a traditional bowl of soup with warm crusty bread and tomato soup is no different. It is also very filling and good for you without breaking the bank.

Ingredients:

30ml Olive Oil

900g Fresh Medium Tomatoes halved

2 Medium Garlic Cloves

1 Small Potato peeled and sliced

300ml Water

Vegetable Stock

5ml Sugar

Instructions:

You need to lightly oil a roasting tin and arrange the tomatoes with cut part facing up. Add the garlic cloves and season then drizzle with the remaining oil. Once you have done this leave it to roast in the oven for 30 minutes on 190c/gas mark 5.


Eat a balanced diet and enjoy your food

When I was growing up before there was all this annoying media coverage about obesity people really did enjoy their meals. They looked forward to eating their favourite things and there were lots of regular trips to McDonalds and Pizza Restaurants and I must admit I loved every moment of it.

As I look back at those that I attended school with not one of them was overweight we were all healthy happy children. Now though with the idea that children should eat this and not that the fun in food has soon disappeared. They worry too much now about what they eat and this can have a very bad effect on their wellbeing.


Welsh Rarebit

A fantastic easy lunch or snack for you that is a personal favourite in our household…

Ingredients:

25g Butter

25g Flour

150ml Milk

75ml Brown Ale

175g Mature Cheddar Cheese

1 Teaspoon of Mustard

2 Teaspoons of Worcestershire Sauce

1 Egg Yolk

4 Slices of Bread

Instructions:

Mix the flour and butter together until they form a nice paste. Then bring the milk to the boil and remove it from the heat. Whisk the flour and butter and then return to the heat avoiding any lumps.
